Lemon Cheesecake - No Bake


Base :
2 cups sweet biscuit crumbs (Nice or Milk Arrowroot)
1 teaspoon cinnamon
4oz (125 g ) melted butter

Combine together, press into the sides & bottom of a spring form tin. Bake in a moderate oven for 10 minutes & cool. (This gives it a nice crunch).

Filling :
1 Lemon jelly
3/4 cup boiling water
1 dessertspoon grated lemon rind
1/4 cup lemon juice
1 1/2 cups carnation milk Chilled(beat the carnation milk separately before started)
8oz (250 g) Philadelphia cream cheese at room temperature.
1 cup castor sugar
1 teaspoon Vanilla Essence

Dissolve jelly in boiling water, add lemon juice & rind, & cool slightly.
Beat cheese until smooth, blend in sugar, vanilla & beaten milk, then jelly mixture. Pour into crumb crust & chill for several hours, Overnight if possible. Decorate as desired.
