Fruit Cake

Ingredients:
2 cups Selfraising flour
750g(24 oz) mix fruits
2 cups orange juice
Soak mix fruits with 2 cups of orange juice over night,
then mix well with selfraising flour, spread evenly
on the 20-24 cm tin, on 170*C oven for one hour then cover the top with foil
and cook for further 15 more minutes.

Pavlova
3 or 4 eggs ( white eggs)
pinch salt
1 1/2 cups castor sugar
1 tspn white vinegar
1 tspn corn flour
2 tspn vanilla
4 Tbspn boiling water
Strawberry or other fruits
300 ml thickened cream
beat the white eggs for 5 minutes then add sugar, beat more and add vinegar, corn flour and Vanilla , mix well till thick and stands in peaks, put the water one tablespoon at the time. Bake for one hour at 140* C
Leave the pavlova in the oven until the oven cool
beat thickened cream and spread over pavlova then strawberry cut.
Seves : 6
Pavlova can be made up to a day ahead, cover, keep at room temperature. Pavlova is best filled an hour before serving. Recipe unsuitable to freeze or microwave.
